I had my 883C in for a 1,000 mile service and since then the bike is feeling different to me when I ride.

The best way I can explain it is that when I ride, there is a slight feeling of hesitation, actually more like as if being pushed back very lightly when I ride. Another way to explain it as if the front suspension wasn't correct and gave more of a back and forth rocking chair feeling.
Again, the feeling is very slight, but wasn't there before I had it in for service.

The motor sounds fine. The bike shifts just fine. The hesitation feeling is more noticeable when I'm riding under 45 mph. When I'm going faster, I don't really feel it.

I was at HD dealer today and they asked me to bring it in tomorrow when the technician that serviced my bike will be in.

I just wanted to first get some ideas from other what might be the problem.

During a 1,000 service, could an air filter, oil filter, gasket or anything be not be installed back on incorrectly causing some this type of problem?

One thing that I also should mention is right after the bike was serviced, I filled my tank with Chevron 91 octane gas. I never used Chevron in my bike before. I mainly used either Mobil or Shell and a couple times used ARCO, all 91 octane. Didn't have problems then.
I expect Chevron to be good gas as I use it in my car, but could I have a bad batch of fuel in my tank which may cause problems?
I will tell this to the HD tech, so he'll know if it's a possible fuel problem or not.

Is it hesitating when you first open the throttle, all the time, partial throttle? Does it sound like it's missing?

No, it's hestitating as I'm just riding along. It doesn't sound like it's missing.

It's not necessarily the engine that's hestitating, but the whole bike itself as if someone was standing in front of it and pushing my bike back very lightly as I ride.

It doesn't seem like a huge problem, but it wasn't there before.

My bike was test rode by a HD tech. He said he didn't find anything wrong with the engine itself, but recommended that he stiffen up my rear suspension a bit.
I had him adjust my suspesion so now my bike handles way much better than it did before on the turns and it kind of decreased the hestitation feeling I was having. So I'm guessing the culprit all along was my suspension.
