If you life around central North Carolina and are interested in either motorcycle safety or off road safety courses, you should check out http://motomark1.com. I take a safety course every year and often I will take one of their courses. They are pricey around $300 or so, but well worth it.
Also, in NC as with many other states, the LEOs offer bike safety courses for free. Here they can be found at http://bikesafenc.com/ and go by city/area. The best part is they are free. I find that they help with getting the winter rusk out of my skills and getting my mind back on driving the bike, not just riding.
