for bolts in a blind thread,like exhaust manifolds and sorts?Other than break,
Heat, hand torch, or regular. If the bolt is broken, drill out and use easy out. Heat first, use a left hand drill bit (sometimes that will extract a broken bolt or stud.) Be careful not to drill into the treads. Center punch the broken stud before attempting to drill it. Cussing a lot doesn't help.

Manual Impact Driver

Won't help once stripped but for stuck nuts/bolts I've had my bacon saved by a manual impact driver set many many times:

Put a socket on the end, put the thing on the nut, whack the back of the thing with a hammer of your choosing. Reversible too, just in case you encounter a reverse-threaded problem.

I used my dad's a LOT when I was a teenager, my first car was a rust bucket and needed exhaust and suspension work. With one of these and a torch there was nothing I couldn't do. Last year he gave it to me, it was like seeing an old friend after 22 years. We used it to free a stuck bolt on a neighbor's brakes a couple weeks ago, in fact.
