Hi!

I am looking for a commute bike only, easy and "enjoyable" to drive in traffic.
I will use it around 10-12K miles a year.

First one to come in mind is the 2018 MT-07 (FZ-07).
What do you think? any other suggestions i should consider?

I live in the sticks, so my commutes are fairly stress free, but I did ride the MT-07 last year at a Yamaha demo and it was a lot of fun.

If you're commuting in heavy traffic that probably means a lot of shifting, so perhaps an automatic bike like the Honda NC700x is worth considering.

Triumph Bonniville. Super comfortable, easy to ride. A lot of used for cooled 865cc bikes available cheap or the new T100's for I think around $10k or the T120 for about $12k. You can have cruise control installed as well for about $300 on the new bikes
