Hey guys so i have been rebuilding this bike for the past two weeks and today i tried starting it and all i got was a single loud click from below me which i think is the solenoid. It has not ran in two weeks due to me fixing it up but did run the day i bought it. I have installed new LED lights and a speedometer since then but also installed a new battery which is currently charging until tomorrow. I've heard clicking before, which usually means a dead or low battery, but never this solid single click. Does this mean im going to have to fix the starter motor?

Not necessarily. The first thing I would check is whether the engine will physically turn - make sure it's not somehow jammed or something.

If it's not, if possible I would jump the two large posts on the solenoid which should put voltage directly into the starter motor itself, bypassing the solenoid. See if the engine turns then. (Make sure it's in neutral.) '

Hopefully it's just a dead battery from doing your electrical work.
