Default V-Star 650 Revs Up When Clutch Is Released

So I was riding tonight and a weird thing started happening. When I pull in the clutch the bike started to rev up, and would rev extremely high (like redlining, I imagine) unless I pulled the clutch lever again. Basically every time I shift the bike revs up quickly, making shifting a pain. Also when I'm stopped at lights or stop signs the bike just stays at really high revs, unless I kick it in neutral, but even then it revs up a little, but steady. If I hold the clutch in while in neutral it revs more than when I release it. It pulls more too, like normally I can hold myself back when I release the clutch in first, up to the point where it almost dies. Tonight when I did that the bike actually pulled forward to the point where I couldn't stop it with my feet. I actually tipped it over when I got into the garage because of the extra power, I came in too fast and did a really embarrassing slow motion fall to the right lol. Anyways after I lifted it up there was a bit of gas on the garage floor.

I just replaced the clutch pads, and put new oil in. I believe it's a little low on the oil (like .4 liters or less, possibly .1 or whatever), I forgot to check. Any ideas or advice would be appreciated, thanks guys!

My bike will do this when it is fully warmed up AND I leave the choke on full. It's my signal to reach down and push the choke nob in.

My thought too...check the choke, the idle, I had to replace my clutch cable once already before 20K, and did you put the clutch plates in oil for an hour before you put them on? and line them up correctly? and in the right direction? I just replaced mine too...so I was learning too!
